Gluten Free Strawberry Banana Blintzes

Shavuot may have come and gone, but that doesn't mean us breakfast lovers can't still enjoy a blintz or two! Usually I need breakfast in 5 minutes flat (and coffee before that!), but on a lazy Shabbat morning sometimes a little something decadent is in order.  But just because it tastes like a dessert, it doesn't mean it has to have all the calories of one! 

Crepe ingredients :

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (I use 30 calorie vanilla almond milk)
  • 1/2 cup water
  • 1 tbsp sugar (add more or less depending on your preference)
  • 1 cup Gluten-Free All Purpose Flour
  • 1 tablespoon butter, for pan (or coconut oil)

Filling :

  • 1 cup non fat cottage cheese
  • 2 tbsp strawberry (or other fruit) jam
  • 1/2 fresh or frozen banana, heated and mashed up
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Topping :

  • 1 banana, sliced into coins
  • 1 tsp cinnamon

Procedure :

  • Melt 1/2 tbsp of butter in a medium non stick pan (if not using a non stick pan, you may need a bit more butter)
  • Whisk all crepe ingredients together in a big bowl, starting with the wet ingredients and slowly mixing in the flour to avoid clumps
  • Pre heat oven to 300 degrees
  • Mix all filling ingredients together in a oven safe bowl
  • Place filling ingredients in the oven to warm through (you could probably do this in the microwave) and leave in their until crepes are done
  • Once the butter is hot, turn burner on med low
  • Pour 1/4 cup batter in the pan & swirl pan around to make the batter evenly spread and thin
  • Wait about 30-45 seconds and use a spatula to flip the crepe
  • Wait about 10 seconds and remove to a plate (you could turn the oven down slightly and keep them warm in there as well)
  • After 4 crepes are finished, add another 1/2 tbsp butter and repeat
  • Fill crepes with fillings, roll, add the toppings and serve!

Makes 8 medium blintzes and serves 2-4 people

2 blintzes : 308 calories

4 blintzes : 615 calories
