I think I might be able to live the rest of my life off nothing but cheese and wine. But you and I both know that would be a poor health decision. Instead, I choose to have a love affair with goat cheese as often as possible. It makes any dish complex and interesting. Plus, at only 80 calories per oz it makes the perfect addition to any vegetarian meal! With some serious flavor and creaminess, this recipe is one of my favorites!
What you will need :
- 2 cups uncooked quinoa (yields about 5 cups cooked)
- 6 medium tomatoes, diced
- 4 cloves of garlic, minced
- 4 cups green beans, cut into bite size pieces
- 5 oz goat cheese
- 1 tbsp olive oil
- 2 tsp cayenne pepper
- 2 tsp salt
What to do :
- Pre heat oven to 425 degrees
- Cook quinoa in a rice cooker or in a pot in the exact way you would cook white rice
- Parboil chopped green beans (I suggest boiling for about 5 minutes)
- In a large frying pan, add the garlic, olive oil, tomatoes, cayenne and salt
- Sauté until tomatoes are nice and mushy
- Layer cooked quinoa into the bottom of a casserole dish
- Layer tomato mixture over quinoa
- Layer green beans over tomatoes
- Crumble goat cheese evenly over the top
- Bake for 20 minutes, or until cheese is slightly browned and all is hot!
- Serve and enjoy :)
