About HERB: Mastering the Art of Cooking with Cannabis

"The authoritative volume on how to cook with cannabis."

- Michael Ruhlman

Seasoned chefs and cooking novices alike will revel in creating homemade cannabis-infused treats with these delicious, reliable recipes.

Enjoy the art of at-home cuisine in an entirely new way with the first cookbook to treat the humble cannabis herb as the unique culinary ingredient that it is.

Herb featured in The New York Times

Paired with delicious recipes and the pleasures of good company, cannabis cookery might open a new dimension in dining that echoes the evolutions in the wine and cocktail cultures.

We are HERB.

Everything we do we believe in the betterment of mankind. We want to educate the world about the benefits of cannabis and provide a platform for the modern cannabis enthusiast to learn more about cannabis, express themselves, and interact with a like-minded community.

Our goal is to help a billion people.

We believe:

  • Cannabis is medicine
  • The war on drugs is a complete failure
  • Prohibition must end
  • Cannabis has the power to positively change lives

We’re excited to announce Herb — our new cookbook.

Prohibition is over.

Colorado and Washington State have legalized recreational cannabis; Denver and Seattle are now epicenters of the culinary-cannabis movement. Many other states have long-established medicinal-marijuana regimes.

Cannabis has brought relief and happiness to millions. Its best days aren’t behind us — they’re ahead of us.

We feel the socio-political environment is finally right for this cookbook.

The best cannabis cookbook. Ever.

Herb represents a return to what cannabis has always been: something worthy of craft, culture, and connoisseurship.

Herb is a hardcover, 200+ page cookbook which includes:

  • Hundreds of our favorite, mouth-watering recipes
  • Beautiful photography
  • Detailed extraction methods
  • The science behind cannabis
  • Medicating with cannabis
  • And much, much, more...

We’re bringing cannabis cuisine to your kitchen table.

Butternut Squash Soup

Pure flavors and a velvety texture make this soup an HERB favorite. Many markets sell butternut squash already peeled and cut in chunks, which makes the preparation easier and faster. Be sure you let the soup cool before pureeing it, since blending hot liquids can be dangerous and messy.

INGREDIENTS

  • 2 tablespoons cannabutter
  • 1 medium sweet onion, such as Vidalia or Walla Walla, finely diced
  • 1 (2- to 3-pound) butternut squash, peeled, seeded, and cut into 1-inch chunks
  • 512 cups unsalted chicken stock
  • 12 cup heavy cream
  • 12 teaspoon ground nutmeg
  • Kosher salt and finely ground fresh black pepper, to taste

DIRECTIONS

  1. In a large pot, melt the cannabutter over medium-low heat. Add the onions and cook until they are translucent, about 8 minutes.
  2. Add the squash and stock. Bring to a simmer and cook until the squash is tender, about 15 to 20 minutes. Stir in the cream, then turn off the heat and let the soup cool slightly.
  3. Working in 2 batches, puree the soup in a blender or food processor. Or, if you have an immersion blender, you can puree the soup directly in the pot.
  4. Return the blended soup to the pot and rewarm it over medium-low heat. Season with the nutmeg, salt, and pepper before serving.

Tomahawk Rib Eye

The tomahawk rib eye (also called a cowboy rib eye) is a rib steak with the entire rib bone left intact. The bone is trimmed of meat and fat, making for an impressive presentation (and it can also act as a handle for the steak, if you’re so inclined).

INGREDIENTS

  • 1 (18-ounce) bone-in cowboy-cut rib eye, at room temperature
  • 2 tablespoons canola oil Kosher salt and coarsely ground fresh black pepper
  • 2 teaspoons Garlic-Herb Cannabutter or another compound butter of your choosing

DIRECTIONS

  1. Put a 12-inch cast-iron skillet in the oven and preheat the oven to 500F.
  2. Rub the steak with the oil and season it liberally with salt and pepper.
  3. Wearing an oven mitt, carefully remove the hot skillet from the oven and put it on the stove over high heat. Put the steak in the pan and sear it for 1 minute, then turn it and sear on the other side for 1 minute. Flip the steak and carefully return the pan to the oven.
  4. Cook the steak for 3 minutes, flip it, and cook for an additional 3 minutes, or until an instant-read thermometer reads 140F. Remove it from the oven and let it rest, tented with aluminum foil, for 10 minutes.
  5. Slice meat off the bone and cut into thick slices. Top with cannabutter.

Delicious Thanksgiving Pumpkin Pie recipe from our chef Laurie Wolfe

Hello Backers!

Rumor has it there's a little holiday coming up called Thanksgiving... so I got in touch with one of our celebrity chefs, Laurie Wolfe, and asked if she could whip something up for you! I was worried she'd be too busy sunbathing and reflecting on the success of Herb: Mastering the Art of Cooking with Cannabis, but no, she was itching to get back into the kitchen for you guys!

Together with her partner Bruce (who created the stunning images for the book), she came up with this delicious pumpkin pie recipe: Laurie Wolfe's "Special" Pumpkin Pie

If this pie is meant to be shared with non cannabis users, why not infuse the sour cream sauce? That way only the ones who care to indulge can do so, with a drizzle to a dollop of this creamy canna-bliss.

Happy Thanksgiving, and let's get some peace on earth going too.

 "Special" Pumpkin Pie

Serves 8

Ingredients

  • 2 eggs
  • 1 cup brown sugar
  • 1 ½ cups pumpkin puree
  • 1 cup cream
  • 3 tablespoons canna-butter, melted and cooled
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • 1 pie crust*

Directions

Heat oven to 350

  1. In a mixing bowl beat the eggs and the sugar together until light and fluffy.
  2. Add the pumpkin, cream, canna-butter, cinnamon, nutmeg and ginger. Mix well.
  3. Pour into a pie crust* and bake till done. The pie will rise during baking and then settle when cooling.
  4. Serve with a dollop of brown sugar sour cream sauce.**

Pie Crust*

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 sticks butter, unsalted
  • 1/3 to ½ cup water

 Directions

  1. In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight.
  2. Roll out dough on a floured counter. Don't over work it. Use as directed in pie recipe. You can freeze the other half for up to 3 months.

Sour cream sauce**

If you want to infuse the sauce, add the 3 tablespoons of melted and cooled canna-butter to the sour cream. Increase all the spices by ½ teaspoon.

Ingredients

  • 1 cup sour cream
  • 3 tablespoons brown sugar or maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon cloves
  • ¼ teaspoon ginger

Method

  1. Combine all ingredients in a bowl. Chill for an hour to meld flavors.
