#1 is very cool -- the best out of the first and third option -- but I have to say that I'd prefer cover #2. It's unique where as the forest theme is somewhat generic. Either way, can't wait to read it!
Cover #1, though again I think I personally would prefer blue over red lettering for the title. Red just gets lost to the eye, I find. Also, I'd want to save the beetle for the inside cover/title page area. Just a striking clean line/ink drawing style beetle on the page by itself, leading into the whole book. But that's just my overzealous tweaking - #1 is still the winner overall.
